Abundance 'Tomato Sauce'

In the blink of an eye, Summer is over and Autumn has arrived. Late season fruit trees are bearing overladen branches, so it is time to begin using up the produce. This morning I picked 1 bucket of tomatoes, not enough to preserve in bottles so I decided to make a sauce that can be used as a pizza base or tricked up with black olives and capers to make a quick 'Puttanesca' sauce. Onions, garlic, tomatoes, bay leaves, oregano, marjoram, basil, salt, pepper and sugar. Simmered until cooked. Passed twice through a food mill and bottled in hot sterilized bottles. Now to find some room in my already full pantry!
