I have a glut of strawberries at the moment. Not just because it is the beginning of the season but because our dog has not found them yet! I made this strawberry shortcake for afternoon tea on Sunday.
Strawberry Shortcake
60g butter
2 tablespoons sugar
2 egg yolks
1/4 cup plain flour
1 punnet strawberries
!/2 cup plum or strawberry jam, I used homemade strawberry jelly
1 dessert spoon water
Cream butter and sugar till light and fluffy. Add egg yolks and beat well. Work in sifted flour until well combined. Knead dough on a lightly floured board and press down into chosen tin. Bake in a moderate oven 15 to 20 minutes. Remove from tin and allow to cool slightly.
Reserve a few strawberries for decoration, wash and hull strawberries and cut in half. Arrange over warm pastry. Combine jam and water, stir over a low heat until just boiling, push through a sieve and allow to cool slightly. Generously brush over strawberries and shortcake. Refrigerate until set. Decorate with whipped cream and remaining strawberries.
