For Pressure Canning the Headspace is always 1 inch or 2 .5 cm
For Waterbath Preserving in Fowlers Vacola jars.
Fruit and Tomatoes, 12mm or 1/2 inch.
Juice, pickled vegetables and cordial, 12mm or 1/2 inch.
Jams, pickles, jellies, relish, chutney, sauces, condiments, 6-7mm or 1/4 inch.
Lemon juice or Citric Acid must be added to Tomatoes when processed in Fowlers Vacola Jars.
No 20 bottles, 2 tsp lemon juice or 1/4 teaspoon of citric acid.
No 27 bottles, 1 tablespoon of lemon juice of 1/2 teaspoon of citric acid.
No 31 bottles, same as number 27 bottles.
No 36 bottles, 2 tablespoons of lemon juice or 2 teaspoons of citric acid.
